Sheesh! More Quiche!

Today's post is all about quiche. In my childhood home quiche was our traditional Christmas morning breakfast. I think largely because preparation was simple, (likely done the night before) and once in the oven my mother didn't have to babysit it much and we could enjoy opening gifts as a family.

It wasn't until I started this blog that I attempted to make a quiche myself. It came about from wanting to branch out from omelettes.  Today is not my first attempt at quiche, but probably my third or so. I don't really know why I didn't blog about it the other times but now's the time as I look out the window at the snow covered ground this very Canadian May long weekend.
I basically stole this recipe Betty Crocker.com Spinach Mushroom Quiche but used a store bought crust and was kind of loosey-goosey with my measurements of ingredients (scandalous I know).

Where I differed from the recipe was based on what I had on hand. I used a blend of crimini and white mushrooms, an orange bell pepper, and three cheeses: asiago, emmentaler, and parmesan.

Quiche is pretty easy. I don't know what prevented me from trying to make it before. I sautéed the the mushrooms and onions in butter then mixed everything together, poured it into the crust, and tossed it in the oven.

The results were great. I was worried that despite using three cheeses I didn't use as much as the recipe called for but my fears were unfounded.  Quiche is another fun dish in my growing repertoire of culinary delights. Plus Mrs. ISMOTU loves quiche so it works out nicely in my favour ;)
