Le St-Antoine is a mild cheddar with herbs, garlic, and onion made by fromagerie Ile-aux-Grues in Quebec. Previously I've tried out Cheddar Ile-aux-Grues. Will this fancified version cut the mustard?
Well there's no mustard to be found here but I'd wager Le St-Antoine would be great in sandwiches.
True to form here in Casa ISMOTU we tried this one out as part of a cheese plate dinner after which I was too stuffed with delicious cheese to actually write about it. This morning I decided I needed to wrap this up and so I sliced off a generous hunk for taste refreshment and grated the rest into a delicious omelette for breakfast.
On its own Le St-Antoine has a firm but yielding texture that melts in your mouth. The mildness of the cheddar allows the herbs and other flavours to shine through. Nothing is too potent and all the flavours are well balanced. This cheese didn't wow me at first but it is a solid and delicious addition to your cheese keeper. High quality, fresh ingredients combined with profound cheese making knowledge means Le St-Antoine Cheddar is a winner.
