Sila al Peperoncino

I am really not great at blogging in a timely manner. Good thing I never set out to keep a schedule here or I'd be failing miserably.  Today I'm going to finally complete my reviews of March's Cheese of the Month with Sila al Peperoncino.

This Italian cheese is laced with hot pepper flakes which makes it right up my alley.  At first taste you don't really notice the pepper. In fact it almost seems like there are no peppers initially, but the heat sneaks up on your tastebuds, slamming them with a delicious amount of spiciness.

Apparently this cheese hails from Sicily and is aged for about 2 to 4 months. It is semi-hard with a creaminess that compliments the spicy peppers perfectly.  I used this in my ritual weekend breakfast omelette but it would be grate (great) on salads and pastas as well.
