Allmikas Bavarian Emmentaler

Allmikas Bavarian Emmentaler is made by a farmer's collective that has the exacting standards you'd expect from Germans. Regular readers have heard me rave about gruyère but will this variation on a different type of Swiss classic tantalize my taste buds? Find out after the jump.
This emmentaler has the distinctive savoury flavour of a swiss cheese but is mild, not very sharp.  It has some holes but not the large ones like in the cartoons.  There is a nutty quality to the flavour that is quite nice.  We had this cheese as part of a cheese plate dinner and I think it would be great in omelettes and quiche (more on that later).  I haven't had emmentaler enough to know how this Bavarian version differs from the traditional swiss, but I can say that it has a nice springy texture and a delicious flavour.
