Grilled Cheese Month: Goat Gouda w/Apricot Jam

This morning I had quite the predicament on my hands. Do I use the last of the Sylvan Star Goat Gouda to make scrambled eggs or an omelette for breakfast? Or do I try my hand at a breakfast themed grilled cheese?
Since Grilled Cheese Month comes but once a year I decided to shake it up from my usual omelette and make a grilled cheese sandwich that would be part of a balanced breakfast.

With our bread supply restored and the grill plates for the griddler in the dishwasher I decided to go the more traditional route and "grill" the sandwiches in a frying pan. I buttered the outside of each slice and then slathered some apricot jam on the inside of one slice.  I laid out a layer of goat gouda and for a little spice added a dash of red pepper flakes. My plan was a solid one I think, but my execution left something to be desired. 

I was also making scrambled eggs (sans cheese) and my timing wasn't great. I turned the heat on too early and while ensuring I didn't dry out the eggs too much I charred the sandwiches a wee bit.  I'm not sure if I had the heat up too high or too low on the sandwiches one side was definitely blacker than intended.  The cheese didn't melt as much as I'd have liked either. That may have been because I sliced it too thick but I don't know how much thinner I could've made it.  Shredding the cheese may have avoided that problem.  I also think I made the jam layer too thick which may have contributed to the lack of melting on the cheese. The chilli flakes didn't really add any flavour to speak of so maybe I could've added more to get the "Sweet-n-spicy" taste I was going for.
Okay, maybe not the most "balanced" breakfast... 
but it was pretty tasty overall.
So for my first attempt at grilled cheese in a pan it was not an abject failure but definitely had room for improvement.  The eggs were good, I usually add cheese to my scrambled eggs but thought that would be overkill with the grilled cheese sandwiches.  I'm actually glad I made just plain scrambled eggs for once and I had forgotten they can be yummy on their own. It was also nice to make scrambled eggs on purpose and not just have an omelette fall apart on me. ;)
