Apparently April is grilled cheese month which a friend of mine said I needed to feature on this blog. So here we are.
This first post is actually kind of accidental because I wasn't planning on making any grilled cheese sandwiches until the weekend but Mrs. ISMOTU was being clever and turned some leftovers into delicious grilled fajita sandwiches with swiss cheese.
So since I didn't make the sandwiches and I was just hungry after coming home from work I wasn't really thinking about blogging so I failed to take any pictures. Use your imagination internetters!
Last night we had chicken fajitas but wanted a twist on the leftovers tonight. Here's the deets:
Our ingredients:
potato bread (which is a thing and is actually pretty yummy)
guacamole
sandwich sliced swiss cheese
bacon
butter
Set the electric grill to medium. (ours is a "griddler")
Butter the outside of the bread, on the inner faces spread some guacamole, add a slice or two each of cheese and bacon, a scoop of chicken fajita innards, close it up and toss on the grill.
These worked out really well. We used swiss cheese because that was on hand and needed to get used up. Normally I wouldn't have even though to combine swiss cheese and bacon with Mexican food but I was pleasantly surprised.
I hope to write at least one or two more posts to celebrate grilled cheese month with different variations on this classic sandwich. Stay tuned!
