Another unique cheese from Sylvan Star Cheese. We found their booth at the Farmer's Market whcih carries a wider variety of their products than the local Foo' Mar'. I'm a fan of nettle tea but I wasn't sure how it would taste in a cheese. Is this another win for Sylvan Star?
Sylvan Star gouda is always nice base to build on so the addition of nettle, celery, chive, onion, and garlic was lovely. It's a bit tricky to separate all the flavours but the herbaceous notes are all in harmony. The nice semi-firm texture allows for easy snacking which is great but dangerous. We decided to try this in our latest spinach/mushroom/onion quiche for dinner tonight. It worked quite well.
Sylvan Star Nettle & Celery Gouda is definitely worth a try.
Recommended.

Any thoughts on how this would compare with a plain nettle gouda without the celery and whatnot?
ReplyDeleteI love nettle cheese. And nettles, but not dealing with them on plants.
I think it'd be a much subtler flavour without the celery and chives, etc. I don't know how much dimension the taste would have.
