Punchestown Irish Mature Cheddar

Punchestown Irish Mature Cheddar was a nicely aged cheddar that I enjoyed in a variety of ways. Sadly it's one that I probably waited too long to review and my memory is hazy on the nuances of its flavour and unfortunately I've eaten the whole brick of it now. The fact that it's all eaten is a point in its favour as it means I wanted to keep eating it. I used the Punchestown cheddar in omelettes, sandwiches, salads and more. I seem to remember it being less salty than it's fellow cheddar from the Emerald Isle "the Craic" and again it had a notable but smooth flavour.

"The Craic" Extra Mature Irish Cheddar

"The Craic" Extra Mature Irish Cheddar is very salty. But delicious. It has a rich aged flavour without being overly sharp. But now I'm wondering if I've been eating so much sharper, stronger, older cheese that my palate has readjusted and like a junkie I need a bigger and bigger hit to get the same high or in this case the same pointy "stab your tongue" tanginess from my cheese. I'm not sure but the Craic is a delicious cheese that was lovely in a simple salad I made for dinner the other night and will possibly be part of the breakfast sandwiches I'll be making tomorrow morning with some fancy applewood smoked bacon.
